Lime Pickled Red Onion

Ingredients

  • 1 large red onion or 2 medium red onions (thinly sliced)
  • 1 squeeze of fresh lime juice
  • Celtic sea salt (optional, to taste)

Method

Place your thinly sliced red onion in a bowl and massage it thoroughly with the fresh lime juice until all the lime has been fully mixed into the onions. Leave to stand whilst you prepare the rest of your dish.

These lime pickled onions work beautifully scattered over salads to add an extremely powerful flavour, or serve them alongside fish dishes for a vibrant accompaniment. The result is huge flavour with very little work required. If you prefer a salty taste, simply add a pinch of Celtic sea salt to finish.
