- 240g mashed, ripe banana (from about 3 medium bananas)
- 2 eggs
- 60ml pure maple syrup
- 10ml vanilla extract
Dry Ingredients
- 100g packed fine blanched almond flour
- 100g gluten free oat flour
- 1tsp baking powder
- 1tsp cinnamon
- 1tsp salt
- chocolate chips or broken chocolate pieces 70%
Method
- Preheat your oven to 180°C and prepare your baking tin with parchment paper or a light coating of oil.
- In a large bowl, combine the mashed banana, eggs, maple syrup, and vanilla extract. Mix until well blended.
- In a separate bowl, whisk together the almond flour, oat flour, baking powder, cinnamon, and salt.
- Gently fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.
- Fold in the mini chocolate chips, reserving a few to sprinkle on top if desired.
- Pour the batter into your prepared tin and bake for 25–30 minutes, until a skewer inserted in the centre comes out clean.
- Allow to cool in the tin for 10 minutes before turning out onto a wire rack to cool completely.
