Ricotta Cheese

Ricotta, meaning re-cooked cheese, is a fresh, low-fat, soft cheese made from sheep milk. We reheat the organic whey left over from making another cheese to 90°C, causing the soft Ricotta to float to the surface where we scoop it up. Versatile for both sweet and savoury dishes, it's perfect for cheesecakes, cannoli fillings, pizza toppings, or whipped into a fresh dip.
