Lloyd's Buckwheat pancakes
Ingredients
1 Egg (or flax egg,1tbsp ground flaxseed,1tbsp water)
1/2 Cup buckwheat flour
1/4 Cup whole milk (milk of your choice)
1/4 tsp salt (or to taste)
1/2 Cup water
Filling or topping of your choice. in Lloyds recipie, he has opted for a savoury topping. Bacon eggs, avocado, extra mature cheddar cheese , lettuce and sauce.
Method
In a measuring jug, whisk an egg or flax egg ( adding the two ingredients for flax egg, set aside until it forms a gel)
Add the flour,salt, milk and water to the jug and mix well until a smooth batter
Leave in the fridge for at least 10 minutes,whiilst you prepare your desired topping. THe batter will keep well overnight. If the batter is a little too thick by morning, adding a little water to get a slightly thinner consistancy .
Grease your frying pan with a little oil ,in Lloyds case, he used extra virgin olive oil, allow to heat gently on a medium heat, once the oil has reached a good temperature, add approx 1/4 cup of your batter and even out in the pan. Cook the batter for a good minute or two ,then flip to cook the opposite side. Once you are happy , transfer the pancake onto your plate and add any topping you wish. Voila
