Takes 20 minutesIngredients
- 100g quinoa (tri colour, or mixing white and red quinoa looks more interesting)
- 1 yellow bell pepper, diced into small pieces
- 1 red pepper, diced into small pieces
- Handful of chopped flat leaf parsley
- Handful of chopped almonds, roasted (chop in half if you like a good crunch)
- Handful of sunflower seeds
- Large handful of rocket
- Drizzle of olive oil
- Juice of 1 lemon
- 1 tbsp creamy tahini
Method
- Cook the quinoa. Once cooked drain and place in a mixing bowl.
- Add the diced peppers, chopped parsley, roasted almonds, sunflower seeds, rocket and mix well.
- Squeeze the lemon, pour into a separate container (small jug/ramekin) add olive oil and tahini. Add a pinch of salt and pepper (optional), mix well and pour over the quinoa dish and mix well. You can add a sprinkle of chilli flakes if you wish.
