Chocolate Covered Coconut Bars

Ingredients

  • 1 cup desiccated coconut
  • 1/3 cup Greek yoghurt
  • 1 tbsp maple syrup
  • 80g dark chocolate bar
  • 1/2 tsp coconut oil
  • Pinch of salt

Method

Start by combining your desiccated coconut, Greek yoghurt, and maple syrup in a bowl. Mix everything together until well combined, then roll the mixture into your desired shapes — whether that's bars, balls, or anything in between. Place your creations on a sheet of parchment paper and pop them into the freezer for an hour to firm up.

While they're freezing, prepare your chocolate coating. Break up your dark chocolate bar and place it in a heatproof bowl along with the coconut oil and a pinch of salt. Set this bowl over a saucepan of simmering water (a bain-marie) and let it melt gently, stirring occasionally until smooth and glossy.

Remove your coconut bars from the freezer and, working quickly, dip each one into the melted chocolate, making sure it's completely covered. Use a fork or dipping tool to help with this if needed. Place each chocolate-coated bar onto a fresh sheet of baking paper, then transfer to the fridge for another hour to set.

Once the chocolate has hardened, your homemade bounty bars are ready to enjoy. Store them in an airtight container in the fridge and savour them whenever you fancy a delicious, no-bake treat.
